Happy Friday, y’all! Today we are wrapping up Chicken Wing Week! I am sharing my fifth chicken wing recipe, since the Super Bowl is quickly approaching – in two days. These wings are deep-fried, but not breaded. They are super, super crispy and easy to whip up – much less mess than breading the wings. The sauce was tangy and salty and unique. These definitely pass the test of good wings, which is: can you stop eating them? If you can, there’s a problem. These? No problems whatsoever. Totally addicting.

As per usual, I’ll recap the wings recipes I shared this week, plus do a recipe round-up from some other fantastic bloggers.

First up I showed you some baked wings! These Balsamic-Lacquered Baked Chicken Wings were outstanding, and baking your chicken wings is easy, hands-off, and cuts down on the calories.

Soy Dijon and Blue Cheese Chicken Wings

1 ½ tbs fresh cracked black pepper
Kosher salt, to taste
1/3 cup red wine
½ cup Dijon mustard
3 tbs soy sauce
¾ tbs dried thyme
3 tbs minced garlic
Olive oil
1 cup crumbled blue cheese
2 lbs. chicken wings, cut into sections, tips discarded
Canola oil, for frying

First make the sauce. In a mixing bowl, combine the black pepper, salt, red wine, mustard, soy sauce, thyme, and garlic. Whisk in enough olive oil to emulsify the mixture. Add the blue cheese, stir to combine, and set aside.
Pour about 2 inches of oil into a large, high-sided skillet and heat over medium-high. You want it to heat to 375 F.
Dry the wings thoroughly on paper towels. Working in batches, drop the wings carefully into the hot oil. Fry the wings in the oil about 12 to 15 minutes, turning once. Remove with a slotted spoon or a spider to a paper towel lined plate. Transfer the wings to a large bowl and toss with the sauce to coat thoroughly. You may not need all the sauce. Serve immediately.
